Easter is coming up and that means one of my favorite kinds of cake is soon to be everywhere – CARROT CAKE! Yum! This tasty, often moist (sorry if you despise that word, there’s no other way to talk about it) Easter dessert is paired with my favorite kind of frosting – cream cheese frosting. While most of us enjoy this beauty in the traditional version of a cake, there’s so many different ways to get your cake fix!

What is carrot cake?

Some historians think that carrot cake is from Medieval times when it was popular to have carrot pudding. With limited access to sugar, bakers used carrots to sweeten a dish. A traditional carrot cake is a moist (again I know you may not like the word but there really isn’t a good word to describe it), spiced sheet or layered cake, often accompanied by cream cheese frosting or butter cream frosting. Many people add raisins, walnuts, shredded coconut and spices like all spice, cinnamon and cloves. The beauty of this cake is that you can add or omit many of the add-ons, except for the spices, don’t omit the spices.
